200ml newly squeezed lemon juice
500g caster sugar

To make the Premix (makes 850ml, enough for 10)

Directions

To prepare the Citrus Syrup: Place the listed components inside a pan, bring to a simmer, mixing to dissolve. Next, remove from the stove and leave to cool entirely. Pour into a clean bottle, cap it and refrigerate it in the refrigerator, where it will keep for up to four weeks.

To make Premix: Mix the specified liquid ingredients into a large bottle, leave to sit for an hour, then pass it through , ideally through muslin, to ensure it's perfectly clear.

For serving: Measure 85ml of your premix into a stirring glass packed with ice, and stir carefully for a minute to chill. Strain into a chilled martini glass or a similar vessel, decorate with the cranberries and complete it with a light spray of mandarin oil above the glass.
